From dawn to dusk, we run around: doing errands, going to work, driving children to various activities, walking the dog, working out, making meals, paying bills…sometimes, in the middle of all this craziness, we skip certain things to ensure no time wasted. Like breakfast, for example. But it’s the most important way to start your hectic day! Here are 10 coffee mug cooking recipes you can make for breakfast in the microwave. No hassle, and it takes barely any time! All you need is a coffee mug.

Omelette

Ingredients:

  • 2 to 3 eggs
  • 1 Tablespoon of meat, diced (bacon, sausage, ham)
  • 1 Tablespoon of salsa
  • 1 Tablespoon shredded cheese
  • Salt and pepper to taste

Directions:

  1. Coat your mug with olive oil or cooking spray.
  2. Add eggs to mug and whisk together with a fork
  3. Add all remaining ingredients.
  4. Whisk until completely mixed together.
  5. Microwave on high for one minute.
  6. Stir and break up any large chunks of egg.
  7. Cook for another 45 to 60 seconds or until eggs are set.
  8. Enjoy!

Blueberry Muffin

Ingredients:

  • 1/4 cup flour
  • 1 Tablespoon sugar
  • 1/8 teaspoon baking powder
  • 3 Tablespoons milk
  • 1 Tablespoon coconut oil, melted
  • 1/4 cup blueberries, fresh or frozen

Ingredients for topping:

  • 1 Tablespoon coconut oil
  • 1 Tablespoon flour
  • 1 Tablespoon raw sugar

Directions:

  1. In the mug, combine the flour, baking powder, and sugar. Stir in the milk and coconut oil. Place the berries on top.
  2. Make the topping by crumbling together the coconut oil, flour and sugar. Sprinkle on top of the blueberries.
  3. Microwave on high for 90 seconds.

Apple Banana Oatmeal

Ingredients:

  • 1/2 cup quick cooking oats
  • 1 Tablespoon ground flax seed
  • 1 egg
  • 1/2 cup milk
  • 1/3 of a banana, mashed
  • 1/4 teaspoon cinnamon
  • 1/2 of an apple, chopped
  • 2 teaspoons honey

Directions:

  1. Add oats, flax, egg and milk in a mug. Stir well with a fork. Add banana, cinnamon, apple and honey. Stir again until fully combined.
  2. Cook in microwave on high for 2-3 minutes. Fluff with a fork.

Pancake

Ingredients:

  • 1/4 cup Bisquick
  • 1/8 cup of milk

Directions:

  1. Inside the mug, whisk Bisquick and milk with a small whisk for a few seconds. It’s okay if small lumps remain.
  2. Heat in microwave for about 1 minute.

Coffee Cake

Ingredients:

  • ¼ cup Bisquick mix
  • 2 Tablespoons of milk
  • 1 Tablespoon granulated sugar
  • ¼ teaspoon vanilla extract
  • 1 teaspoon coconut oil
  • 1 Tablespoon brown sugar
  • ¼ teaspoon ground cinnamon

Directions:

  1. Lightly spray mug with cooking spray and mix together Bisquick, milk, sugar, vanilla and coconut oil inside.
  2. Mix together brown sugar and cinnamon in a separate dish and sprinkle over the top of the mixture in mug. If desired, swirl with the tip of a knife to spread throughout the mug.
  3. Microwave on high for one minute.

Banana French Toast

Ingredients:

  • 2 slices whole wheat bread, cut in cubes
  • 1 egg
  • 4 Tablespoons almond milk
  • 2 Tablespoons applesauce
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 banana, sliced
  • Maple syrup

Directions:

  1. Layer half the bread cubes into a coffee mug. Top with half of the banana slices. Repeat.
  2. In a small bowl, whisk the egg, almond milk, applesauce, cinnamon and vanilla together. Pour over the top of bananas and bread.
  3. Place mug in microwave for 2 minutes on high. Remove and top with syrup.

Sweet Potato Hash

Ingredients:

  • 1 small sweet potato, peeled and chopped
  • 2 Tablespoons peppers, chopped
  • 1 Tablespoon red onion, chopped
  • 2 Tablespoons grated cheese
  • Salt and pepper, to taste
  • 2 teaspoons rosemary, fresh or dried
  • 1 Tablespoon of butter

Directions:

  1. Place potato pieces into your mug and cover completely with cold water.
  2. Cook for 3-4 minutes in the microwave until it is tender. They will turn an orange color. (Check the potatoes halfway and stir so the mug doesn’t get too hot and overflow).
  3. Drain off the water. Add remaining ingredients and mix everything well together.
  4. Put back in the microwave and heat up for another 40 seconds until hot and the cheese melts.
  5. Enjoy!

Granola

Ingredients

  • 1 Tablespoon pure maple syrup, honey or agave nectar
  • 2 teaspoons water
  • 2 teaspoons vegetable or olive oil
  • ⅛ teaspoon fine sea salt
  • ⅓ cup quick-cooking or old-fashioned rolled oats
  • 1 Tablespoon chopped nuts
  • Optional: 1 Tablespoon chopped dried fruit (e.g., raisins, apricots, cranberries)

Directions:

  1. In a large mug, mix the maple syrup, water, oil, salt, oats and nuts until blended.
  2. Microwave on medium (50%) power for 2 minutes.
  3. Stir, making sure to stir up any syrup on the bottom of the mug.
  4. Microwave on medium (50%) power for 1-1/2 to 2 minutes longer until oats are golden brown.
  5. Mix in the dried fruit, if using. Let stand for 2 to 3 minutes to cool before eating.

Cinnamon Roll

Ingredients:

  • 2 Tablespoons applesauce
  • 1 Tablespoon vegetable oil
  • 1 Tablespoon buttermilk
  • ¼ teaspoon vanilla extract
  • ¼ cup + 1 Tablespoon all-purpose flour
  • 2 ½ Tablespoons packed light-brown sugar
  • ¾ teaspoon ground cinnamon
  • 1 dash ground nutmeg
  • ¼ teaspoon baking powder
  • ⅛ teaspoon salt

Ingredients for icing:

  • 1 Tablespoon cream cheese, softened
  • 2 Tablespoons powdered sugar
  • 1 teaspoon milk

Directions:

  1. Whisk together the ingredients for the icing with a fork. Set aside.
  2. Combine all remaining ingredients in a mug, whisking together with a fork until nearly smooth.
  3. Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds.
  4. Serve warm topped with cream cheese icing.

Peanut Butter and Jelly Oatmeal

Ingredients:

  • 3 Tablespoons rolled oats
  • 6 Tablespoons water
  • 2 Tablespoons milk
  • 2 teaspoons peanut butter
  • 2 teaspoons raspberry/ strawberry jelly

Directions:

  1. Whisk together all ingredients, except jelly, in a large mug.
  2. Cook for one minute, then stop and stir. Cook for another minute, stir and continue cooking until done. This stirring will stop it overheating and spilling over in the microwave. It will take roughly three minutes to cook in total.
  3. Top with raspberry or strawberry jelly. Enjoy.
